Piquing my Pinterest {New Recipes including Vegetarian and freezer friendly}

I was looking ahead for my next menu plan and decided to round up some of my “pinned” recipes in one place.*  Click on the links to go straight to the pin. I am linking up with Tina Grey and Natasha at 5 Minutes just for me – go check them out for more pinterest posts!

 

I am trying to include vegetarian dishes 1-2 times each week so need to boost my recipe stash in that area. I love the looks of:

Black Bean Burgers that I can make in bulk and freeze for quick veggie dinner

Rice and beans Burritos that can also be prepared in bulk and frozen – easy peasy

Vegetarian Quinoa Chili looks good and I am hoping it will taste good too as I have an opened bag of quinoa from my last disastrous attempt to cook this new-to me-food

Creamed Polenta with White Beans and Spinach cannot be anything but fabulous as I love all those ingredients

I am aiming for 1 fish night if we only have 1 vegetarian + 2 red meat nights + 3 white meat nights:

 

Balsamic Onion Pot Roast  – melt in your mouth AND balsamic = yum

Lime and Coconut Chicken  – I always have these ingredients at home

Spanish Chicken with Chorizo and Potatoes - my husband will forgive all the veggie dishes for extra chorizo – I think

Pork Chops over rice - we rarely eat pork chops, but with less red meat I need something besides chicken!

Tilapia Cilantro Fish Tacos - I am thinking since I never see Tilapia in Australia I will try Basa

Cilantro Lime Shrimp – can you tell we like cilantro (coriander) and lime in this house?

Also what is it with men and chorizo? I’m sure the mister could only eat chorizo for the rest of his life quite happily!

Chorizo is like the ultimate bad food – salami x 100 so feels super indulgent (yummy!)

Thanks for that – have followed your board – will explore this week. I want to like quinoa but did not love the 1st attempt. i know it is worth it to explore again though

We eat Basa fillets. I like them best cooked in alfoil with some butter and herbs. Usually served with a salad unless hubby has been naughty and bought beer battered fries. :-)

sounds yum. i like to do the wrap in foil parcel idea too – with tomatoes, coriander, chilli, lemon and onion is simple and yum)

Thanks and so good to see your blog – I have friends who live a paleo lifestyle but I don’t know much about it- it certainly has taken off in the last 2 years though!

I think I might have to go on a Pinterest hunt for things I can make, freeze and reheat for lunches! With hubby home every day for lunch it gets hard to think of something other than a peanut butter sandwich! He works nights so I’m in a good routine of freezing his portion of dinner for another night but the lunches are lacking.

The burritos look amazing! Will have to give those a go
